Miniature Cheese Quiche

1 9 "pastry shell
1/2 cup milki
1 c. shredded cheddar cheese
2 eggs, beaten
paprika
Shape pastry into 24 1" balls.
Place in lightly greased 1 3/4" muffin pans, shaping each
into a shell. Bake at 350F for 5 min. Combine eggs, milk,
butter, and cheese. Stir well, and pour into pastry shells.
Sprinkle parika. Bake at 350F for 25 min. or until set.
Yield: 24 mini quiches

My husband likes to add 1/2 small can of diced green chilis.



Impossible Cheeseburger Pie

1 pound ground beef
1 cup chopped onion
1 cup of milk
½ teaspoon salt
2 eggs
1 cup of shredded Cheddar cheese
½ cup Bisquick baking mix

Heat oven to 400° Cook ground beef and onion; drain.
Spread in greased 9" pie plate; sprinkle with cheese.
Stir remaining ingredients with fork until blended.
Pour into plate. Bake 25 minutes or until knife
inserted in center comes out clean.

Cynthia's Tuna Noodle Casserole

Cook 1 package (16 oz) noodles, drain
Mix together 2 cans of mushroom soup
1 1/2 cups grated cheese
1 package frozen peas
sautéed onions
2 can of tuna

mix all together, place in casserole dish
bake 15-18 minutes
crunch potatoes chip and sprinkle over
and put back in the for another 5minutes



Hominy Casserole by Stephanie Bernd

1 large can of Hominy
1 small container sour cream
1 small can diced green chilies
1 cup grated cheddar cheese
Mix together & heat thoroughly.
lighten it up with low-fat cheese & sour cream



Spaghetti Bake By Joanie Sandoval

1 lb. of ground sausage
& 1 16 oz. pk. of spaghetti
1 large jar of spaghetti sauce
1 cup of shredded mozarella cheese
1 cup of shredded parmesan cheese
2 eggs beaten.
Cook the meat until done and set aside.
Cook the spaghetti until done,
add 1 tbsp of olive oil and stir. then drain and set aside.
Coat a large rectangular casserole dish with 1 tbsp of butter.
Add the spaghetti to the casserole dish. Beat 2 eggs
and pour over the spaghetti, then add all the parmesan cheese
and 1/2 of the mozarella. Mix well and press down evenly.
Add meat mixture to spaghetti sauce
and mix well, then add to spaghetti and smooth down.
Sprinkle on the rest of the mozarella cheese.
Bake for 15-20 minutess. at 450 °.
Cool down for about 10 - 15 minutes.
Cut into large squares to serve as a main dish.
Cut into dmall squares to serve as an appetizer.
Serve with a salad and garlic bread and enjoy!.



Quesadilla Quiche

2 4 ounce can chopped green chilles drained
1 pound shredded cheddar cheese
1 cup of Bisquick
2 cups of milk .. 4 eggs

Preheat oven to 425 °. Grease a 9x13 inch pan.
Sprinkle chilies and cheese onto the bottom of the pan.
Beat milk, Bisquick, and eggs until smooth; pour over
chillies and cheese. Bake for 25-30 minutes.
Let it stand 10 minutes before cutting.



Beefy Biscuit Cups

1 pound ground beef
1 (140z jar) spaghetti sauce
2 (80x) packages of refrigerated biscuits
1 cup cheddar cheese, shredded

Preheat oven to 375 degrees. Brown ground beef in skillet;
drain. Stir in spaghetti sauce; cook over medium heat 5-10
minutes or until heated through. Press biscuits onto the
bottom and up the sides of greased muffin cups. Spoon
2 tablespoons meat mixture into center of each cup.
Bake 15-17 minutes or until golden brown. Sprinkle with
cheese; bake 3 minutes longer or until cheese is melted.

Optional, use sloppy Joe can sauce instead of spaghetti sauce.
Add 1 small can of corn to meat mixture.



Impossible Bacon Pie

12 slices bacon, crisply fried and crumbled
1 cup Bisquick Baking Mix
4 eggs beaten
2 cups of milk
1 cup of shredded cheese
1/3 cup diced onion
½ teaspoon onion salt
½ teaspoon pepper

Heat oven to 400 degrees. Lightly grease a pie plate,
10x1 ½ inches. Sprinkle bacon, cheese, onion in pie plate.
Beat the remaining ingredients until smooth, 15 seconds
on high speed blender, or one minute with a hand beater.
Pour into pie plate. Bake until golden brown and knife
inserted halfway between center and edge comes out clean.
23-40 minutes. Let stand for 5 minutes before cutting.
6 servings.



White Chicken Chilli

3 boneless, skinless chicken breast halves
2 tablespoons butter
2 stalks, celery, diced
2 carrots, diced
1 small onion, diced
1 12 ounce can chicken broth
2 14 ounce cans great northern beans
1 14 ounce can diced tomatoes
2 tablespoons chili powder
salt and pepper to taste.

Dice chicken breast into 1 inch cubes.Sauté in butter.
Add celery, onion, carrots and chicken broth. Cool until
tender. Drain beans and add to vegetable and chicken mixture.
Add tomatoes, chili powder and seasoning. Simmer 10 minutes.



Irma's Award Winning Chili

2 lbs of hamburger meat
1 can of Las Palmas red chili sauce (12 ounces)
1 bunch of cilantro
1 large can whole tomatoes
garlic powder,pepper and salt to taste

Season hamburger meat with garlic powder, salt and pepper
to your own taste and brown. Add cilantro, whole tomatoes and
a can of red chili sauce to the meat and simmer on medium flame
for about 15 minutes, then add to a pot of freshly cooked
pinto beans and simmer for about 30 minutes.


Twiced Bake Potatoes

4 potatoes ½ cup butter or margarine
½ cup of milk
½ teaspoon salt, pepper, onion powder
½ cup grated cheese

Wash and dry potatoes. Poke potatoes with a fork so steam
can escape. Arrange in a circle. Cook 11-13 minutes on high
in the microwave. Cut a thin lengthwise slice across the top,
just enough to form a boat. Scoop out potato and place in a
mixing bowl. Add milk, and mash until smooth. Add ¼ cup butter
or margarine. Add ½ teaspoon of salt, pepper, and onion powder.
Bear vigorously until fluffy. Turn oven to 375 degrees.
Place empty shells on ungreased cookie sheet. Fill each potato
with the potato mixture. Top with grated cheese.
Bake uncovered until golden brown, about 20 minutes.



Easy Cheese Scalloped Potatoes

8 cups of thinly sliced potatoes
3 cups of flour
8 ounces of Colby cheese
1 medium onion chopped
6 slices of bacon, friend crisp 6 tablespoons of butter
3 cups of milk or cream
2 ½ teaspoons of salt
½ teaspoon of paprika
½ teaspoon mustard

Preheat oven to 350 Grease a large glass casserole dish
Shake potato slices in a bag with flour. Place potatoes,
cheese, Onions and crumbled bacon in 4 layers and dot with
butter.Heat milk ,salt, paprika, and mustard until hot.
Pour mixture evenly over the potatoes. Bake for 1 ½ hours.
Keep covered with foil the first half hour. Yields 10 servings



Vegetables with Cheese

8 Carrots, chopped to bite slice pieces
3 cups chopped of broccoli
½ white onion chopped into large pieces
½ purple onion chopped into large pieces
4 -6 zucchini cut into bite size pieces
2-3 Roma tomatoes cut up
1 teaspoon of ground basil
½ teaspoon of pepper and
½ teaspoon garlic powder
salt to taste
1 cup of shredded cheddar or jack cheese

Sauté onion in 2 tablespoons of cooking oil
Microwave carrots in water for 3 minutes or until ½ cooked
Microwave broccoli & zucchini in water for 1 minutes until
partially cooked. Drain waters. Add carrots to the onions,
and stir. Add the seasoning and mix. Add zucchini and broccoli
and tomatoes and stir until the tomatoes are just cooked.
Pour into a large rectangular dish. Sprinkle with grated cheese
while the vegetables are hot. Serve with salad and bread.

If you want this to be a meat dish, just add 1-2 cups
cooked chicken. This recipe is great when you have leftover
chicken or turkey. This also taste great served over white rice.



Stuffed Zucchini Boats

4 medium zucchini >br>1 pound ground beef
1 small onion, chopped
1 garlic clove, minced
1 teaspoon crushed oregano
½ teaspoon salt
½ teaspoon pepper
¼ cup grated Parmesan cheese
1 10 ¾ ounce can condenses tomato soup
1 cup grated mozzarella cheese.

Heat oven to 375 degrees. Cut off tem end of zucchini.
Cut zucchini in half lengthwise. Scoop out the seeds and pulp.
(reserve the pulp)leaving ¼ inch shell. In a skillet, brown
ground beef, onion, garlic and oregano. Drain the excess fat.
Add chopped zucchini pulp, Parmesan cheese, ¼ of soup , salt
and pepper. Arrange zucchini shells in 9x13 inch pan. Spoon
mixture into shells. Spoon remaining soup over top of shells.
Sprinkle additional Parmesan cheese. Cover with foil and bake
for 35 minutes. Sprinkle grated Mozzarella cheese over zucchini
and bake another 5 minutes.
