Desserts






I am not much of a baker and when I do bake, it is usually
something fast and easy. So here are a few simple recipes
I will share with you. I hope they taste ok!



Crunchy Apple Crisp

4 ups peeled, sliced Golden Delicious apples
½ cup water or apple juice
4 teaspoons of firmly packed brown sugar
2 teaspoons of lemon juice
½ cup oatmeal, quick or old fashioned
¾ teaspoon of ground cinnamon
2 tablespoon of chopped walnuts
1 tablespoon firmly packed brown sugar
1 tablespoon soft vegetable oil or margarine, melted

In a mixing bowl, combine apples, water, brown sugar,
lemon juice, and cinnamon. Tossing lightly to coat apples.
Layer on bottom of 8-inch square glass baking dish.
Combine nuts, and brown sugar. Add margarine, mixing well.
Sprinkle evenly over apples. Bake at 375 degrees for about
30 minutes or until apples are tender and topping is
lightly browned. Serve warm or chilled. Makes 4 large serving.
We like it warm with vanilla icecream!



Easy Apple Delights

I package Pillsbury dinner roll
1 small jar of applesauce, a pinch of cinnamon.

Press out each roll into square shape
Add 1 tablespoon of applesauce in the middle of each roll.
Fold into a turnover shape and bake at 400 degrees,3 to 4 minutes.



Pistachio Jello Dessert

1 package pistachio Jello.......1 20 oz. can crushed pineapple
1 cup mini marshmellows.........1 large container Cool Whip
½ cup finely chopped pecans (optional)

Mix dry Jello with juice from the pineapple. Then fold all
other ingredients together. Fridge for 1 hour before serving



Raspberry Dessert

1 cup broken nut meat
1 large package raspberry gelatin mix
1 cup boiling water
2 packages frozen raspberries, thawed
Optional: whipping topping
40 vanilla wafers crushed
½ cup melted butter
2 cups powdered sugar
3 ounces cream sugar
¾ cup butter

Mix wafers with butter and pat into bottom of a 9x13 inch pan.
Cream powdered sugar, cream cheese and butter, and spread
over the wafers. Sprinkle with nut meats(we like almonds)
Mix gelatin with boiling water, Add raspberries.
When slightly thick, pour over cream cheese mixture.
Refrigerate and serve with whipped cream,if desired.
Yield: 15 servings



Key Lime Pie

½ cup key lime juice
1 (14oz) sweetened condensed
3 egg yokes
1 (9 inch) prepared graham crust
Preheat, oven to 350 degrees. Pour lime juice, milk, and
egg yolk into a blender; blend until smooth. Pour into
pie crust. Bake 15 minutes. Allow to stand 10 minutes before
refrigerating. Top with cool whip and lime slices.



Lemon Cookies

1 package lemon cake mix
1 8 ounce cartoon Cool Whip
1 whole egg.
1 pound powdered
Preheat oven to 350 degrees. Mix together cake mix, Cool whip,
and egg until thoroughly blended. Chill thoroughly, 3-4 hours.
After chilling, scoop up 1 teaspoon at a time, and roll into balls.
Roll balls into powdered sugar a nd place n cookie sheet.
Bake 12-15 minutes. Cool and enjoy. Makes 4 dozen


Andrew & Daniel's Fruit Smoothie

12 ice cubes
1 cup of vanilla ice cream
½ - 1 cup plums or strawberries cut into pieces.
1 small banana
½ teaspoon cinnamon
1 teaspoon vanilla
2 tablespoons sugar
Blend all the ingredients on high for 2-3 minutes


Fruit Pizza

1 18 ounce package refrigerated cookie dough
1 8 ounce package cream cheese
1/3 cup sugar
½ teaspoon vanilla extract
½ cup orange marmalade
1 tablespoon water
Assorted fruits, sliced
Slice cookies in 1/8-inch thick and overlap on a 14-inch pizza pan.
Bake at 275 degrees for 13 minutes. In a medium bowl, combine
the cream cheese, sugar, vanilla until creamy. Spread onto cookie dough,
Arrange fruit in a circle on pizza and add water to marmalade. Spread
over the fruit. Chill Assorted fruits may include bananas, grapes, kiwi,
strawberry, peaches, or apples. Makes 4-6 servings.



Linda's Lemon Jello Cake

1 box lemon cake mix
1 4ounce package lemon Jello
4 eggs
¾ cup water
¾ cup oil
3 cups powdered sugar
3 tablespoons margarine
¼ cup lemon juice

Heat oven 350 degrees. Grease and flour a 9x13 pan.In a large bowl.
Combine cake mix, jello, eggs, water and oil. Beat at medium speed
for 2 minutes. Pour into pan. Bake for 45 minutes. While cake is
baking, combine powdered sugar, sugar, soft margarine and lemon
juice. Beat until well mixed. As soon as the cake comes out of the
oven, poke as many holes with a large fork and then pour mixture
over hot cake.



Strawberry Pizza

1 8 ounce package cream cheese
1 cup powdered sugar
½ pint whip cream
1 quart fresh strawberries
½ cup powdered sugar
1 cup flour
Heat oven 375 degrees.

Rinse and hull the strawberries. Then in slices. Set aside.

Crust: Combine soft margarine, ½ cup powdered sugar, and
1 cup flour. With floured fingers, pat dough mixture evenly on a
pizza pan( without the holes in the bottom.) Prick the crust
with a fork and bake 12-15 minutes. Cool Meanwhile, prepare the
filling. Cream the 8 ounce cream cheese with 1 cup powdered sugar.
Fold in the whip cream. Spoon the filling over crust and arrange
strawberries on top.



Pumpkin Banana Pie

3 medium bananas quartered
1 cup evaporated skin milk
½ cup firmly packed brown sugar
1 tablespoon of all purpose flour
teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup canned pumpkin
3 eggs, beaten

Place the bananas in a blender or food processor and blend
until smooth. Add the rest of the ingredients and blend
until smooth. Combine crumbs with margarine and mix well
in a small bowl. Press mixture in a 9 inch pie plate that
has been coated with the spray. Pour the mixture into the
pie crust and bake at 375 degrees for 45 minutes or until
a knife inserted in middle comes out clean. Serve chilled
with or without whip cream.



Death By Chocolate By Bob Lockovich
2 large boxes of chocolate instant pudding & pie filling
3 cups of milk for each box of chocolate.
1 package of Oreo cookies
1 large containers of Cool whip
Make pudding according to directions.
Crush Oreo cookies after placing in plastic Ziploc.
In a large rectangular glass, layer evenly in this order:
Oreo cookies
1 package of prepared pudding
1 container of Cool whip
Oreo Cookies
2nd box of prepared pudding pudding
2nd container of cool whip
Top with the balance of the cookies
Serve chilled. Serves around 15 people.
