1905 SALAD AND DRESSING

Serves 8 as a salad course
This is another terrific Columbia Restaurant Matchbook Recipe.1905 designates the year the restaurant was established in Ybor City, Tampa, Florida.
INGREDIENTS FOR DRESSING
- 4 Large Garlic cloves, minced.
- 1 Tsp. Dried oregano, crumbled.
- 1 Tsp. Worcestershire [woosty] sauce.
- 1 Tbs. Lemon juice.
- 2 Tbs. Wine vinegar.
- 1 Tsp. Salt, or to taste.
- 1/2 Tsp. Fresh ground black pepper, or to taste.
- 1/2 Cup Olive oil, the good stuff.
DRESSING PREPARATION
- Mix garlic, oregano and woosty sauce in a bowl. Beat
until smooth with a wire whisk.
- Gradually add olive oil, while whisking, to form a
smooth emulsion.
- Whisk-in vinegar and lemon juice and season with salt
and pepper.
- Pour dressing into tight-lidded container and chill
until ready to use.
SALAD INGREDIENTS
- 1 Head iceberg lettuce. Cut as you prefer.
- 3 Ripe tomatoes, cut in eighths.
- 3 Stalks celery, sliced into 1/8" rounds.
- 1 Cup Swiss cheese, julienned.
- 1 Cup Baked ham or turkey, julienned.
- 1/2 Cup Green olives.
- 2 Tbs. Grated parmesan or romano cheese.
SALAD PREPARATION
- In a large salad bowl toss together all salad
ingredients, except grated cheese.
- Add dressing to salad and toss well. Add grated cheese
and toss to mix.
Serve in individual salad bowls with lots of crusty
bread.
