
MARINATED SPICY GREEN OLIVES, FRED

Yield: Easily adjustable.
The only way I can describe this olive recipe is;
"Addictively delicious."
These olives are great when used as part of a salad, as is; with "dunkin-bread" during
"happy-hour" and as part of a buffet spread. They will also make a great beginning base for the salad used on New Orleans "Po-Boys."
I am dedicating this recipe to my "Cyber-friend, Fred;" who has become my HTML and anything else I did not understand tutor; without whose help, I would surely have failed. The reasons are many times more numerous, but, to mention a few; Fred has had to possess the patience of "JOB" to answer my "constant barrage of exasperating questions." Plus, he likes the color of olive, and so inspired this background.
I do so hope, I am in some small way, an accredit to him and his "tutorial expertise."

At last! "On to the recipe!"
INGREDIENT LISTING
- 1 Jar green olives, drain, reserve brine and save empty jar and lid.
- Pint, quart or gallon.
- Pitted, pitted and pimento stuffed; or, with pits.
- Lots of peeled and minced fresh garlic.
- Dried, crushed red pepper flakes.
- Dried and crumbled oregano leaves.
- Olive oil.
- Reserved liquid brine from olives.
PREPARATION
- "IF" you are using pitted or pitted and pimento stuffed olives; slice them into 1/3rd's or in half, depending upon their size.
- "IF" you are using olives with pits; place them on a cutting board and give them a good whack with the side of a cleaver or large chefs knife. You can then easily remove the olive "meat;" which may not require any additional sizing/trimming.
- When all the olives have been "prep-sized," place several pieces in their reserved jar, forming an even layer about 1 inch thick.
- Sprinkle several bits of minced garlic, crushed red pepper and crumbled oregano on the olives in the jar. Continue layering until all olives have been used. Do not stuff tightly.
- Fill jar about 3/4's full with reserved brine.
- Top-off with olive oil, replace lid and tighten securely.
- Shake jar several times to thoroughly mix all the ingredients.
- Refrigerate for a few days to permit flavors to develop.
