Besan Laddu

Ingredients

4 Cups Besan
2 Cups powdered sugar
1 Cup ghee
Few cardamoms - powdered
Powdered cashews and other nuts as you wish.

Procedure

Sieve besan. Roast it a bit and keep aside. Heat ghee and add besan to it and mix well. Cook till the cooked smell comes. Add the cardamoms and powdered cashews and other nuts. Let it cool a bit and then add the powdered sugar and mix well. Transfer into another vessel and let it cool just so much that you can shape it. Grease your palms with a little ghee while shaping into balls.

Ingredients

1 Large pack Marie Biscuits
1 can condensed milk
I cup fresh grated coconut
Half cup Cocoa Powder
Half cup chopped nuts

Method :

  1. Crush biscuits fine.
  2. Blend all other ingredients and shape into a roll.
  3. Wrap in silver foil and put in fridge for 1 hr. Slice and serve!

Shahi Milk Toast



Shahi Milk Toast

Ingredients

Milk - 400 ml
Bread - 8 slice
Sugar - to taste
Saffron
Cardamom - 8 pieces
Cashew - 10 pieces
Badam - 10 pieces
Pista - 10 pieces
Ghee/Butter

Method:

  1. Cut each slice of bread into 4 pieces.
  2. Deep fry bread pieces in ghee/butter till they are light brown in color.
  3. Add the other items in milk and boil it for 15-20 minutes.
  4. Pour milk in serving bowls and put the bread slices in them just before serving.
Serves: 4

Date Walnut cake

Eggless Date & Walnut Cake

Ingredients

1/2 cup each of chopped dates, sugar, chopped walnuts, Veg. Oil
Curd : 1tbsp
Milk : less than 1/2 cup
Maida : 1cup
Baking soda : 1 flattened tsp.

Method:

  1. Grind together chopped dates,sugar, milk , curd for smooth paste.
  2. Pour in a mixing bowl and add oil , fold oil in properly.
  3. Take maida and baking soda & sieve tiwce together. Add this to the batter in mixing bowl along with walnuts. Now mix this batter till air starts getting in the batter.
  4. Meanwhile Pre-heat oven at 350 degree C Take a baking dish & powder it with little maida so cake comes out without sticking. Pour in the batter & settle it. Slide the dish in oven & let bake at 350 degree C for 50 mins. Check after 45 mins by piercing, if the knife comes out neat it's done.
  5. Serve with Kheer or Custard along or eat alone.

Khaman Dhokla

Instant Khaman Dhokla

Ingredients

1 cup Besan
3 tsp. oil
1/2 tsp sugar
1 tsp of soda
1 tsp citric acid

Salt and chilly powder according to taste.

shredded coconut powder
sesame seeds
3 green chillies.
fresh cilantro
curry leaves

Method

  1. Mix citric acid in a cup of water and add besan, salt, sugar, chilly powder, then make a thick paste.
  2. Mix it all well.
  3. sprinkle soda on the paste pour hot oil(1 tsp) and stir it well.
  4. Then, take a vessel which can fit in steamer or pressure cooker and grease it with oil and pour the paste in it.
  5. Steam cook it for 15 minutes on medium low flame and keep it for starting 2-3 minutes on medium high flame.
  6. After it is ready take it out let it cool for 5 minutes.
  7. In the mean time take a pan and pour 2tbsp. of oil in it and then add mustard seeds
  8. When the seeds splatters then add curry leaves, sesame seeds and green chillies to it add 1/2 cup of water and let it boil allow it to cool than put it on khaman.
  9. Then, cut the ready khaman in square pieces
  10. And then garnish it with fresh cilantro and shredded coconut.
  11. It is ready to eat.

Paneer Makhani


Paneer Makhani

Ingredients

Paneer -200 gms.
Tomato Puree -4 tbsp.
Tomato Ketchup -4 tbsp.
Half & Half Cream -6 tbsp.
Sugar -1 tsp.(opt.)
Capsicum -1 med.(cubed deseeded)
Ginger -1" greated
Butter -1 tsp.
Salt -to taste
Pepper -1/4 tsp.
Water -1/4 cup.

Method

  1. Heat butter for 20 seconds. Add tomato puree, stir, add tomato sauce, mix well.
  2. Add water, stir then add capsicum, cook for two minutes add paneer, salt, pepper, sugar & ginger. Cook for two minutes.
  3. Add cream and stir cook for a minute.
  4. Serve hot with Naan or Tandoori Roti's.

Sabudana Khichadi

Sabudana Khichadi

Ingredients

1 cup sabudana (sago)
1/2 cup roasted peanuts,
1 medium sized potato,
10 green chillies,
2 tbsp. coriander leaves,
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp urad daal
2-3 tsp oil
salt to taste

Method

  1. Soak sabudana overnight in one cup water (do not add more water).
  2. Grind the roasted peanuts into a fine powder.
  3. Heat oil and add mustard seeds, cumin seeds and urad daal.
  4. Fry till urad daal is golden brown.
  5. Chop potato into small pieces and slice the chillies.
  6. Add chopped potatoes and chillies to the oil.
  7. After the potatoes and chillies are cooked add the soaked sabudana and fry for a minute.
  8. Now add the peanut powder, salt and keep frying for about 8-10 minutes.
  9. Garnish with finely chopped coriander leaves and serve.

Corn Rice




Corn Rice

Ingredients

1 cup cooked rice (usually leftover)
1 cup corn
2 green chillies
1/2 tsp mustard seeds
1/4 tsp Hing (Asafoetida)
2 tbsp dry coconut powder
2 tsp oil
1-2 tsp lemon juice

Method:

  1. Run the frozen corn under hot water and strain it.
  2. Heat the oil in a pan.
  3. Once oil is hot add the mustard seeds. Let it splutter.
  4. Then add the cut green chillies and saute for few seconds
  5. Now add the corn. (frozen corn is already a little soft)
  6. Saute it for around 2 minutes
  7. Now add the cooked rice to it and saute.
  8. Add the dry coconut powder and mix it well
  9. Now add the lemon juice and mix it well.
  10. serve hot.

Tamarind Chutney



Tamarind Chutney

Ingredients

12-14 Dates with the seeds removed
tamarind(fist full)
Jaggery (Gur) (About 50 gms or enough to neutralize the sour taste of tamarind)
Half teaspoonful Salt
1 teaspoonful Red Chilli Powder

Method :

  1. Boil the dates for 15 to 20 minutes. Don't add water in excessive quantities. Add enough water to immerse the date seeds.
  2. Allow them to cool, and them put them in the mixer.
  3. soak the tamarind for 15 min in hot water add salt, chilli powder, Cumin seed powder, and
  4. Grind into a fine paste,
  5. Add Jaggery, and dissolve it into the mixture.

This sweet and sour chutney tastes good with Samosas, Batate-wadas and can also be used in Ragda-patis.

Preparation time : 30 minutes

Sabudana Bada

Ingredients

Sabudana(small) 250 gms
Potatoes 3 medium sized ones (approx 250 gms)
Coriander leaves : one bunch
Green Chillies : 10 or to your taste, finely chopped
Red Chilli powder : 1 tea spoon
Salt : as per your taste

Method:

  1. Soak sabudana in water for ten minutes
  2. Boil the potatoes
  3. Drain all the water from the sabudana
  4. Mash the potatoes and add it to the sabudhani
  5. Add salt, green chillies and red chilli powder to the above mixture and mix well
  6. Shape dough into appropriately sized balls/flattened-disks and deep fry till golden brown.
