Drinks:


Real Old-Fashion Lemonade (Provided by: Christina Cash)

Juice of 6 Lemons (1 cup)

3/4 cup sugar (or to taste)

4 cups cold water

1 Lemon, sliced crosswise

Ice Cubes

In a large pitcher, combine lemon juice and sugar; stir until sugar dissolves. Add remaining ingredients and blend well. Serve immediately. (makes 6 8oz. servings)

Pink Lemonade:

Add a few drops red food coloring or grenadine syrup.

Honeyed Lemonade:

Add honey to taste in place of sugar



Sangrita (Provided by: Christina Cash)

3 cups Tomato Juice

1 1/2 cups Orange Juice

1/2 cup Traditional Salsa

Juice of 1 medium Lime

Mix all ingredients in large pitcher; chill. Serve over ice with fruit garnishes, if desired. (makes 6 6oz. servings)



Appetizers:


Savory Apricot Bites (Provided by: Christina Cash)

4 ounces Cream Cheese, softened

12 fresh Apricots, halved, pitted and brushed with Lemon Juice

1/2 - 1 cup Pistachios, finely choped

Stir Cream Cheese till smooth. Pipe or spoon cheese into pitted Apricot halves. Top each half with one teaspoon Pistachios. (makes 2 dozen bites, 12 appetizer servings)



Smoked Chicken Bagel Snacks (Provided by: Christina Cash)

1/3 cup nonfat pasteurized Cream Cheese, softened

2 teaspoons Spicy Brown Mustard

1/4 cup chopped roasted Red Peppers, drained

1 Green Onion with top, sliced

5 Mini-Bagels, split

3 ounces Smoked chicken or Turkey, cut into 10 very thin slices

1/4 medium cucumber, cut into 10 thin slices

1. Combine Cream Cheese and Mustard in a small bowl; mix well. Stir in Peppers and Green Onion.

2. Spread Cream Cheese mixture evenly onto all cut side of Bagels. Cover bottom halves of bagels with Chicken, folding Chicken to fit onto Bagels; top with Cucumber Slices and tops of Bagels. (makes 5 servings)
