Vegetarian Taco Soup

Soup Ingredients:

 

·        (1) 15 oz can of black beans

·        (2) 15.25 oz cans of whole kernel corn

·        (1) 27 oz Bush Chili Beans

·        (1) 28 oz can of crushed tomatoes

·        (1) 26 oz jar of corn and black bean salsa

·        (1) 32 oz chicken broth

·        (1) envelope taco seasoning mix

·        (1) envelope of ranch dressing mix

 

Optional Accoutrements:

 

·        Shredded Mexican Cheese

·        Sour Cream

·        Black Olives

·        Corn Chips / Tostitos / Etc.

 

 

Combine all Soup Ingredients in 6 qt pot. 

Bring to a boil. 

Let simmer 20 to 30 minutes.

Serve with selected accoutrements.

 

Makes approximately 20 eight oz servings.
