Breads and Muffins
Recipe:  All-Around Great Bread Base
  
(This recipe may be used on a number of different bread types)
Ingredients:
3 Eggs-beaten
2 cups Sugar
1 cup Oil
3 cups Flour
1 tsp. Baking Soda
1/2 tsp. Baking Powder
2 tsp. Cinnamon
1/4 tsp. Ground Cloves
1/2 tsp. Allspice
1 tsp. Vanilla
** Bread Option Types-
Carrot Raisin Bread-
2 cups Grated Peeled Carrots
1/2 cup Raisins
1/2 cup Walnuts chopped
Zucchini Nut Bread-
2 cups Grated Unpeeled Zucchini
1 cup Walnuts chopped
Banana Nut Bread-
3 cups Masked Bananas
1 cup Walnuts chopped
Directions:
Mix oil, eggs and sugar together well. Add zucchini, bananas or carrots, which ever fits the bread type, and mix well. Add all dry ingredients mix well and add nuts or raisins, which ever fits bread type. Bake at 350 degrees for 45 minutes in regular bread loaf baking pan. ** Also makes great jumbo muffins(30minutes)
and mini loaves(15-20 minutes). ENJOY!
Recipe: Cornbread
Ingredients:
1/4 pound soft Butter
1 cup Sugar
2 Eggs
1 cup Corn Meal
1 1/2 cups Flour
2 tsp. Baking Powder
1/4 tsp. Salt
1 1/2 cups Sweet Milk
Directions:
Cream butter and sugar.
Add eggs and corn meal, mix well. Shift together flour, baking powder and salt. Add to creamed mixture. Add milk and do not over mix or you will have kernals. Put in greased 8" square Baking dish and bake at 375 degrees for 35 minutes or until done in center. Enjoy!
Recipe: Mexi-Cornbread
Ingredients:
1 cup Margarine
1 cup Sugar
4 Eggs
1- 16 oz cab Creamed Corn
1 can chopped Green Chiles (3 oz)
1/2 cup shredded Jack Cheese
1/2 cup shredded Cheddar Cheese
1 cup Flour
1 cup Cornmeal
4 tsp. Baking Powder
1/4 tsp. Salt

Directions:
Mix all ingredients together and mix well. Pour into greased 8" Baking dish and Bake at 300 degrees for 1 hour or until done. Enjoy!
Recipe:    Hobo Bread
Ingredients:
2 cups Raisins
2 cups Boiling Water
4 cups White Flour
1/2 cup Walnuts
1 tsp. Salt
4 tsp. Baking Soda
2 cups Sugar
6 tbsp. Vegetable Oil
2 Eggs-beaten
Directions:
Pour boiling water over raisins and cook 10 minutes. Drain water into container and measure liquid, if not 2 cups, add water. Add baking powder to water and stir well. Let stand until cool. Cream sugar, oil and eggs together, Combine rest od ingredients and mix well. Grease 6 #2 cans and pour mixture into them. Place on oven rack and bake at 350 degrees for 35-40 minutes or until tops feel firm. Run a sharp knife down center and gently twist to remove bread from can. Just butter and serve! Enjoy!
