Cowboy Recipes
This is a collection of some of my favorite Cowboy recipes...I hope you enjoy them!
Recipe: Cowboy Quiche
Ingredients:
5 cans Whole Green Chilies, seeded
28 ounces Monterey Jack Cheese
5 Eggs-beaten
1- 13 ounce can Evaporated Milk
1 tblsp. Flour
Directions:
Lighty grease the bottom of a 9x13" baking dish. Beat eggs, flour, evaporated milk and salt and pepper to taste and mix well, set aside.
Layer ingredients in following order in baking dish:
1/2 of the chilies, 1/2 of the grated cheese, remaining half of chilies, remaining half of cheese. Pour egg mixture over top and bake at 350 degrees for 30-35 minutes. Allow quiche to set for 20 minutes before serving. Enjoy!
Recipe: Cowboy Eggs
Ingredients:
Bread Slices
Eggs
Directions:
Tear or cut a hole about 1 1/2" in diameter in a slice of bread. Butter both sides and place in frying pan. Drop an egg in the hole. When fried to your taste flip over and cook other side, if desired. May be topped with grated cheese. Enjoy!
Recipe:  Cowboy Elk Stew with Orange
Ingredients:
3 lbs. boneless leg or rump of Elk (no shoulder)
2 tblsp. Butter
1 tblsp. Salad Oil
1/2 cup finely minced Onion
2 medium cloves of Garlic, finely minced
1/4 cup Flour
1 quart Game or Chicken Broth
2 1/2" thick slices of Orange
1 tblsp. Lemon Juice
1 small Bay Leaf
6 whole Cloves
3 whole Allspice
8 whole Pepper Corns
12 sprigs fresh Parsley
2 tblsp. Madeira or Sherry
1 tblsp. grated Orange Rind
Salt and Pepper to taste
Directions:
Cut elk into 1" cubes. Melt butter and oil in a stew pot over low heat. Add meat and saute 5 minutes or until meat looses raw color. Add onions and garlic and saute for another 5 minutes, stirring frequently. Stir in flour and blend well. Slowly stir in broth and bring to a boil. When boil starts to form reduce heat and simmer. Add orange slices and lemon juice. Tie bay leaf, cloves, allspice, peppercorns and parsley in a small bag of cheesecloth and lower into pot. Simmer until meat is tender(1 1/2-2 hours). Remove orange slices and spice bag and add sherry or madeira, orange rind and salt and pepper. Stew is best if made a day before serving and reheated. Serve with risotto or buttered noodles. Enjoy!
Recipe: Cowboy Venison Swiss Steak
Ingredients:
1 1/2 lbs. Venison Steak
1/4 cup Flour
1/2 tsp. Salt
1/8 tsp. Pepper and Garlic Salt
3 tblsp. Butter
3 Onions
1 stalk Celery, diced up
1 cup Tomatoe Sauce or Beef Boullion
2 tblsp. Worcestershire Sauce
Directions:
Trim fat off meat and cut into serving sized peices. Mix flour, salt, pepper, garlic salt and pound into steak. Melt butter and brown meat. Add remaining ingredients, cover and simmer or bake at 325 degrees for 2 hours, or until tender. Enjoy!
