COBB SALAD

1 Head Lettuce
3 hard boiled eggs
1 avocado, sliced
3 ounces blue cheese, crumbled
2 tomatoes, seeded and diced
4 strips of cooked bacon, chopped
6 oz cooked chicken breast, diced>br>
DIJON VINAIGRETTE
2 tbsp lemon juice
1 tbsp red wine vinegar
2 tbsp Dijon mustard
1 Egg yolk
9 tbsp olive oil
Line the bottom of a salad bowl with lettuce. Add the chopped eggs, avocado, blue cheese, tomatoes, bacon and chicken. Toss lightly and set aside while you prepare the dressing.
In a small bowl, mix together the lemon juice, Red wine vinegar, mustard and egg yolk. Slowly whisk in the olive oil. Adjust seasoning with salt and pepper to taste.
Pour the vinaigrette over the salad and toss.
