KEY LIME PIE

1 1/2 Cups Graham Cracker Crumbs
6 tbsp butter melted and cooled
5 Tbsp Sugar
1 Can (1 Oz) sweetened condensed milk
4 Large egg yolks
1/2 cup freshly squeezed key-lime juice
1 Tbsp grated lime zest
1 1/2 cups heavy cream, chilled.
Heat oven to 375 Deg. Combine graham cracker crumbs, butter and 3 tbsp sugar in a
medium bowl; mix well. Press into 9 inch pie plate and bake lightly until brown(approx.
12 minutes) . Cool
Lower oven to 325 deg. In a medium bowl, gently whisk together condensed milk,
egg yolks, key lime juice and zest . Pour into the cooled crust.
Return pie to oven, and bake until the center is set but still quivers when the pan is
nudged, 15 to 127 minutes. Let cool completely.
Shortly before serving, combine cream and remaining 2 tbsp sugar. Whisk on medium
speed with a whisk attachment until peaks form. Spoon over cooled pie. Serve
immediately.
