LEMON CHESS PIE


Pie crust for 9" pie
5 large egg yolks
1 large egg
1 cup buttermilk
2/3 cup sugar
2/3 cup light brown sugar
1/2 teaspoon salt
1 tablespoon lemon zest
2 tablespoons lemon juice
1/2 stick butter

Put crust into 9" pie pan.
Mix together egg yolks, egg, buttermilk, white and brown sugar, salt, lemon zest and lemon juice in a mixing bowl.
Cut the butter into the mixture and melt it by setting the bowl in a container of boiling water.
Stir until butter has melted completely.
Next pour the mixture into the crust and bake in a 300 degree preheated oven for an hour and ten minutes until all but the center is firm.
Don't panic if the center of the pie remains a little undone.
It will firm up once the pie cools.
Serve with whip cream and lemon rind garnish.
