Welsh cookies

 

 

4 Cups Flour   3 tsp. baking powder
3 eggs, beaten   1 tsp. salt
1 1/2 cups sugar   1 tsp. mace
1 tsp nutmeg  
1 cup currants or raisins  
1/2 cup milk

1 Cup unsalted butter, cold and cut into small pieces                                

 

 

In large mixing bowl, combine the flour, baking powder, sugar, salt and nutmeg or mace.  Cut the butter into the flour mixture until it resembles coarse meal.  Add currants, egg and milk, combining well.  Gather the dough into a ball and chill for at least 1/2 hour.  Roll the dough to a 1/4 inch thickness.  Cut out cookies with 2 1/2 inch round cookie cutter.  Brown the cookies in a hot skillet on top of the stove or on an electric skillet, turning to brown on each side.  Cool on a rack and dust with sugar, if desired.
