2 small onions, peeled and thinly sliced 1 cup dried apricot halves 4 chicken breasts, with skin, bone in 1/4 cup honey 2 tablespoons lemon juice 1 tablespoon curry powder 1 teaspoon ground cumin Salt and pepper to taste |

Grease a shallow baking dish. Arrange sliced onions on bottom of dish and cover with the apricot halves. Place chicken, skin side up, on top of the onions and apricots. Sprinkle with salt and pepper. Sauce: Stir together honey, lemon juice, curry powder and ground cumin. Drizzle over the chicken. Bake uncovered at 375 degrees for 55 minutes or until done. |
