Zucchini Bread
3 eggs                                                     3 cups flour
1 cup oil                                                  1/2 teaspoon salt
2-2 1/4 cups sugar                                   2-3 teaspoons cinnamon
1-1 1/2 teaspoons vanilla                           1 cup nuts (optional)
2 cups grated raw zucchini                        1-1 1/2 teaspoon baking soda

Beat eggs.  Beat in sugar, oil, vanilla and zucchini.  Add flour mixture and blend well.  Stir in nuts; pour into pans.  Bake at 350 degrees for 1 to 1 1/4 hours

Yield: 2 loaves
