| Pancakes Mix together: 2 cups flour (part whole wheat, part white) 2 cups buttermilk 1/4 cup oil 4 eggs dash of salt 2 teaspoons soda 1 teaspoon baking powder Mix well and they're ready to go Whole-Wheat Pancakes 2 cups whole-wheat pastry flour, sifted 4 teaspoons baking powder 2 tablespoons sugar 1 teaspoon salt 1 1/2 cups milk or sour milk 1/4 cup cooking oil 2 eggs Combine flour, baking powder, sugar and salt in a large mixing bowl. Make a well. Combine milk, oil, and eggs, and add to flour mixture. Stir just until moistened. Pour onto a preheated greased griddle or skillet. Cook until cakes are full of bubbles and undersurface is nicely browned. Lift with a pancake turner or spatula and brown the other side. Serve immediately. Grandma's Maple Syrup Stir together: 4 cups white sugar 1/2 cup brown sugar 2 cups water Cover and simmer 10 mintues Remove from heat and add: 1 teaspoon vanilla 1 teaspoon maple flavoring Blender Sweet Syrup 1/2 cup molasses 1/2 cup honey 1 teaspoon vanilla Combine all ingredients in a blender or food processor until smooth. Add chopped nuts to the syrup as it is blending, if desired. Yield: 32 ounces. Renee Zamora |
