Combine: 3 3/4 cups flour 2 teaspoons soda 2 teaspoon cinnamon 1 teaspoon salt 1 teaspoon nutmeg 1/2 teaspoon ginger 1/2 teaspoon ground cloves Cream: 2 sticks margarine Gradually add: 2 cups sugar - cream well Blend in and beat well: 4 eggs At low speed, add dry ingredients alternately with 1 1/2 cups canned or cooked pumpkin, beginning and ending with dry ingredients Stir in 12 oz. pkg. chocolate chips and 1 cup chopped nuts. Turn into two greased 9x5 inch loaf pans. Bake at 350 degrees for 1 hour. Cool, then drizzle with the delicious spice glaze (below). Slices better after a day. Spice glaze Combine: 1 cup powdered sugar 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon Dash of cloves Blend in" 3-4 Tablespoons hot water until the consistency of a glaze. OnePan Pumpkin Bread 1/3 cup vegetable oil 2 1/3 cups Bisquick baking mix 1 cup canned pumpkin 2 teaspoon ground cinnamon 3 eggs 1/2 cup raisins 1 1/4 cups sugar Heat oven to 350 degrees. Generously grease bottom of loaf pan, 9x5x3". Mix all ingredients except raisins in pan with fork; beat vigorously 1 min. Stir in raisins. Bake until wooden pick inserted in center comes out clean, 45 to 55 min. Cool 5 min. Run knife around sides of loaf; remove from pan. Renee Zamora |
