| Corn Muffins 1 egg 1/2 cup milk 2 cups Cornmeal baking mix 1 tablespoon butter, melted Preheat oven to 350 degrees. Mix egg and milk in a small bowl, stir into mix, and stir in melted butter. Pour into greased muffin tins and bake for 20 minutes. Honey Whole Wheat Muffins 2 cups Healthy Whole Wheat Biscuit Mix 3 tablespoons honey 1 egg 1/2 cup water 1/2 cup chopped walnuts Preheat oven to 350 degrees. Mix all ingredients at once and stir until thoroughly moistened. The mixture will be lumpy. Fill greased muffin cups two-third full and bake for 20 minutes. Nutty Whole Wheat Biscuits 2/3 cup water 3 cups Healthy Whole Wheat Baking Mix 1/2 cup chopped walnuts or pecans Preheat oven to 350 degrees. Combine water and biscuit mix. Stir until mixture becomes a soft dough; add nuts and mix well. Turn out onto a lightly floured board and knead gently ten times. Roll dough 1/2 inch thick and cut into 2-inch circles. Bake on a ungreased cookie sheet for 15 to 20 minutes. or until golden brown. Quick Dumplings 2 cups Biscuit Baking Mix 2/3 cup milk Beat mix and milk together to form a soft dough To use: Wait for the right moment to drop the dough by spoonfuls onto the top of stew, soup or chili; the liquid must be nearly ready to eat, bubbling hot, and gently simmering. Drop on the dumpling dough, simmer for 10 minutes, then cover and cook for 10 minutes more. Quick Rolled Biscuits 2 cups Biscuit Baking Mix 2/3 cup milk (or water) Preheat oven to 400 degrees. Combine mix and milk and beat until smooth. If dough feels too sticky, add more mix (up to 1/4 cup). Turn dough out onto a surface dusted with baking mix or plain flour, roll dough into a ball to coat, and knead gently ten times. Roll dough out to 1/2 inch thickness and cut into 2-inch circles or squares. Place on ungreased cookie sheet, brush tops with milk to brown, and bake for 8 to 10 min. Quick Biscuit Shortcake 2 1/3 cups Biscuit Baking Mix 1/2 cup milk 3 tablespoons butter, melted 1/4 cup sugar Preheat oven to 400 degrees. Mix all ingredients, stirring until a soft dough is formed. Turn out onto a surface dusted with the baking mix or plain flour and knead gently for 30 seconds. Roll dough 1/2 inch thick and cut into squares or 3 inch rounds. Bake on an ungreased cooking sheet for 10 minutes, or until golden brown. Sweet Biscuits 2 cups Biscuit Baking Mix 2/3 cup milk 1/4 cup Cinnamon Sugar 2 tablespoons Country Butter Follow the instructions for either Quick Rolled or Dropped Biscuits.
