borago officinalis ![]() Parts Usually Used Herb, flowers, leaves and seeds WARNING Contact with the fresh leaves may cause dermatitis in sensitive persons. Prolonged use of borage is not advisable. CULINARY Gather the leaves when the plant is coming into flower. Strip them off singly and reject any that are stained and insect-eaten. Pick only on a fine day, when the sun has dried off the dew. Young shoots of borage leaves can be used in salads and are quite tasty. As they get older and "hairy-er" they aren't quite as palatable. Nutrient Content Potassium It's good for depression.
