Mark's Spininskies

Mark is one of my former students and a compressed video facilitator at school.  He brought these in one day, and they certainly didn't last long!

2 pounds hamburger
1 large head cabbage
1 medium onion
Chuck of sharp Cheddar cheese
Salt and Pepper
2 eggs
Biscuit mix

Cook, crumble and drain hamburger.  Add salt and pepper to taste.  Add chopped onion and shredded cabbage.  Add beaten eggs.  Grate cheese and combine into mixture.  Cook and simmer over low heat until cabbage is tender.  Prepare biscuit mix per directions.  Pinch walnut size pieces of dough off and roll to size of a saucer.  Put two tablespoons of meat mixture on dough; fold like a turnover, crimping edges.  Cook in 1/4" hot grease in heavy skillet until brown on both sides.  Drain.  Use Cream of Mushroom Soup diluted to gravy consistency as a gravy over each as they are served or serve plain.
