Scallion Salmon Bake
(serving for 1 person)
1 Salmon Steak            
1 tsp Soy Sauce       
1 tbsp Sake                          
5 Scallion      
1 Egg                           
.5 Eggplant               
.25 Yellow Peppers
5 tsp Miso Paste       
1 tsp Sugar                 
1 tbsp Salad Oil                   

1.  Pour and mix soy sauce and sake over salmon and let it sit for 5 minutes.
2.  Slice the scallion into small pieces and mix with egg.  Cut the eggplant and yellow peppers into 2 cm cubes. 
3.  In a frying pan, fry #1 salmon with salad oil. 
4.  After frying both sides, take out the salmon and put the #2 scallion&egg over the salmon over a dish.  
5.  Bake the #4 salmon and scallion in oventoaster for 5 minutes. 
6.  In a frying pan, cook the eggplant and yellow peppers with salad oil. Add miso paste and sugar. 
7.  Serve the salmon in a dish and add the eggplant and yellow peppers next to the salmon. 
8.  Ready to be served!
