These recipes are not mine. I got these from recipe work sheets we used when I completed Home Economics at Intermediate and High School, so as such I don't know who the original authors are (but these recipes sure are delicious). INGREDIENTS:
600 grams of small New Potatoes
1 small Avocado
2 teaspoons of Lemon Juice
1 finely diced and de-seeded Red Pepper
6 finely diced Chives
METHOD:
01. Select small, even sized potatoes about 5 cm in diameter.
02. Scrub. Don't peel or cut.
03. Boil, microwave or steam until tender but still firm.
04. Slice into rings about 1 cm thick.
05. Top with Avocado Topping.
Avocado Topping:
Mash some avocado and mix with a little lemon juice. Spread on each
potato slice and garnish with finely diced peppers and/or chives.
INGREDIENTS:
1 rasher of Bacon
1 stalk of Celery
30 grams of Sour Cream
1/2 a teaspoon of Cooking Oil
1/2 a cup of Chese
1 tablespoon of Onion Soup Mix
1/2 a cup of Flour
1 teaspoon of Baking Powder
3 to 4 tablespoons of Milk
METHOD:
01. Dice the bacon, saute in oil.
02. Using the metal blade, speed one, chop the celery in the food processor.
03. Grate the cheese, sift the flour and baking powder together.
04. Combine all the ingredients into a bowl.
05. Drop tablespoonfuls onto a cold oven tray dusted with a little flour.
06. Fan-bake for 10 minutes or until lightly browned.
07. Serve warmed, buttered if desired and garnish with a sprig of fresh herb.
