Cinnamon Apple Cake
* 2 large golden delicious apples, Peeled, cored, and coarsely chopped
* 2/3 cup sugar
* 1 Tsp. cinnamon
* 1/3 cup plain, lowfat yogurt
* 1/3 cup all purpose white flour
* ½ Tsp. baking soda
* 3 Tbsp. vegetable oil
* 1 egg, beaten
* 1 egg white


1. Preheat oven to 350°F. 2. Spray one 8-inch cake pan with nonstick cooking spray. 3. Spray a medium nonstick saute pan with nonstick cooking spray. Saute the apples, tossing occasionally until golden brown, 5 to 7 minutes. Stir in the cinnamon and 1 tablespoon of the sugar. Remove from heat and set aside. 4. Whisk together the yogurt and remaining sugar in a large bowl until very smooth, about 2 minutes. Combine the flour and baking soda, add it to the yogurt mixture, then add the oil, egg and egg white to this batter, whisking well after each addition. Stir the apple pieces into the batter. 5. Pour the batter into the prepared pan, spreading it evenly. Set on a baking sheet and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
