Hummus Spread
* ½ cup 1% lowfat cottage cheese
* ¼ cup fresh parsley
* 2 Tbsp. tahini (sesame seed paste)
* ¼ Tsp. grated lemon rind
* 1 Tbsp. fresh lemon juice
* ½ Tsp. ground coriander
* 1/8 Tsp. salt
* 1 clove garlic
* 1 can (15 ounce) chickpeas (garbanzo beans), rinsed and drained


Place all ingredients in a food processor; process until smooth, scraping sides of processor bowl once. Store in an airtight container in refrigerator. Serve with pita triangles or fresh vegetables.
