Wienerschnitzel

Try this recipe that had been handed down to William by his Austrian
Grandmother!
Ingredients :
Veal or pork chops
1 tablespoon butter
3 tablespoons olive oil
2/3 cup milk
1 egg
fine breadcrumbs
paprika
pepper
salt
flour

Directions :
thin cut chops with bone
Mix flour, salt, pepper, and paprika in one dish
In a second dish, blend egg and milk
Put breadcrumbs in a third dish

dip the chop in the seasoned flour
until completely coated
then dip in egg-milk mixture
and finally in the breadcrumbs
until completely coated
then set aside
heat the oil in frying pan  and butter until very hot
Fry the chops until golden brown on both sides
Serve with mashed potatoes, red cabbage
