Tortellini Supremo

This staff favorite at the Outdoor Gear Exchange is a staple on all of our
outings. It easily serves 2 - 3 hungry campers, is quite hearty and prepares
start to finish in only 30 minutes. It requires fresh vegetables so in the
summer, it is best served on the first night of a trip. The directions below
require two stoves; if you only have one, completely prepare the veggies/sauce
first and then prepare the pasta. With two stoves at your disposal, this is
essentially a self timing meal -- that is, the preparation takes place while
you're cooking it.

Make sure you buy dried tortellini, the fresh or frozen stuff will go bad
quickly. If you have more than three people, any or all parts of the recipe
can be increased to stretch the meal. For a lower fat meal, you can leave off
the cheese and, if absolutely necessary, the butter can be dropped as well
(although the fat is a necessary source of energy). Cayenne and White Pepper
will add some real zing! For a real treat, a fresh loaf of bread and a bottle
of red wine will top this meal off nicely and make a great surprise for you
fellow campers. Let us know how it turns out!

Ingredients:

ù16oz dried cheese tortelini
ù1 large onion
ù1 green pepper
ù3 plum tomatoes
ù1/2 stick of butter
ù1/2 lb. cheese
ù1 pkg. powdered caesar dressing
ù16 oz. tomato sauce
ù1 pkg. ramen noodles

Prepare a 2-1/2 quart pot about 1/3 filled with water and begin to cook at
medium heat (Yeah, I know, just don't set the stove at maximum output). Slice
the onion into chunks and spread in a 2 quart pot in about 1 inch of water.
Put this pot on a stove at medium heat. Slice the pepper into 1 inch square
pieces and layer on top of the onion. Put the butter on top of this pile and
cover. Back to stove one, add the tortellini to the water even if it's not
boiling yet.

Slice up the tomatoes and set aside. Dice the cheese into small cubes and set
aside. When the tortellini has been boiling for about 5 minutes add the
tomatoes to the other veggies and cover. After about 3 minutes, add the tomato
sauce and powdered caesar dressing, stir well and cover. The tortellini should
be about ready (carefully taste test it, a little al dente is OK) Drain some
of the water, leaving about 1" of water above the pasta. Add the cheese and
ramen noodles. When the noodles are soft (about 5 min.) everything should be
ready - no further draining is required. Serve the pasta and smother with
sauce. Mange!
