FRESH FRUIT AMBROSIA
1/4 cup orange juice
1/2 cup club soda
1 medium banana, peeled
1 cup pineapple chunks
2 cups melon balls (cantaloupe, watermelon, honeydew melon)
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 tablespoon shredded coconut
Combine the orange juice, club soda, and banana in a blender and puree until smooth. Place the pineapple and melon balls in a large bowl and pour blended mixture over the fruit. Sprinkle with nutmeg and cardamom. Cover and refrigerate for at least one hour. Sprinkle with shredded coconut before serving. Makes 6 servings.
