Banana Cream Pi

1/3 cup

Baked pastry shell

1 ½ cups

Milk

egg yolks

2 tablespoons

cornstarch

1 teaspoon

vanilla

1/4 teaspoon

salt

bananas, sliced

Scald 1 1/4 cup milk in the top of the double boiler.


Mis the cornstarch and salt to a paste with 1/4 cup cold milk; add sugar.


Pour the hot milk over this mixture; stir and cook in the double boiler until thick. Cover and continue cooking for 15 minutes, stirring occasionally.


Pour the hot mixture over the slightly beaten egg yolks; blend , return tot he double boiler and again cook for 3 minutes.


Remove from the heat; add the vanilla.


Slice bananas on the bottom of the pie shell; pour in the hot filling.


Cover with meringue and brown in a slow oven.
