Caramel Pecan Turtles or Caramel Square __________________________________________________
3/4 cup heavy cream 1/2 cup granulated sugar 1/2 cup light brown sugar 3/4 cup light corn syrup pinch of salt
Combine above ingredients, in large saucepan, over medium heat and stir with wooden spoon until sugar is dissolved. Set candy thermometer in pan and cook over medium heat about 10 minutes stirring occasionally until thermometer reads 234F
Keeping pan on stove boiling, slowly stir in:
3/4 cup heavy cream
Cook and stir about 5 more minutes on high heat until thermometer reads 244F. Remove from heat, stir in:
1 teaspoon vanilla 2 tablespoons butter
Stir until butter is completely melted. On greased cookie sheet arrange 4 pecan halves on greased surface. Split one nut in 1/2 lengthwise and set 1 sliver at top for turtles head, one at bottom for tail. Drip caramel over center of nuts. tips of nut feet, head and tail should poke out of caramel. Let turtles sit untouched until caramel firms up.
