Cheesy Scalloped Potatoes


Preheat oven to 350F.


8 oz cheddar cheese
1/4 cup butter or margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper
5 medium potatoes
2 small yellow onions


Shred cheese and set aside. In 2 quart saucepan melt margarine over low heat. Blend in flour. Add milk all at once, still stirring constantly until slightly thickened. Add shredded cheese, season and continue cooking, still stirring, until cheese melts. Remove from heat. Spread 1/2 of cheese mixture on bottom of shallow baking dish. Slice potatoes and onions, arranging over cheese sauce. Spread remaining cheese sauce over top. Bake until potatoes are tender, about one hour.
