Apple Cake

Ingredients:
nonstick cooking spray
1 1/4 cups sugar
1 cup canola oil
1/2 cup unswetened applesauce
2/3 cup liquid egg substitute
1 teaspoon vanilla
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
3 medium apples, peeled, cored and chopped to make 3 cups
Preparation:
Preheat oven to 350 degress. Spray a 9" x 13" baking pan with nonstick cooking spray; set aside. In a large bowl, combine sugar, oil, applesauce, egg substitute and vanilla; mix well. In a separate bowl, combine flour, baking soda, salt and cinnamon. Add the flour mixture to the sugar mixture and stir just until combined. Stir in apples and pour into prepared pan.

Bake 45-50 minutes

Serve with non fat whipped topping!
