Holiday Peanut Brittle
Quantity/Servings:  Makes approx. 72 Pieces
Ingredients:
2 cups sugar
1 cup light corn syrup
1/4 cup margarine
2 1/2 cups raw peanuts
1 1/2 teaspoons baking soda, sifted
Preparation:
Spray 2 baking sheets with nonstick cooking spray and set aside. Combine sugar, corn syrup, margarine and 1/2 cup water in a saucepan and heat over medium heat until boiling. Continue cooking until a candy thermometer reads 275 degrees, about 30 minutes. Add nuts and cook to 295 degrees, about 15-20 minutes. Remove from heat and quickly sprinkle baking soda over mixture stirring constantly. Immediately pour onto prepared baking sheets. Cool and break into pieces.
