Chicken Cacciatore
Quantity/Servings: 
   Serves 6
Ingredients:
4 boneless, skinless chicken breast halves or 1 cut up fryer, skin removed
1 large onion, chopped or sliced
1 clove garlic, minced
2 to 3 cups canned tomatoes
1 teaspoon salt
pepper to taste
2 cups cooked brown rice, noodel or potatoes
Preparation:
Place chicken in a heavy pan skillet, COmbine remaining ingredients (except rice, noodles or potatoes) and pour over chicken. Cover and steam about 1 hour. If desired, uncover during last 15 miunutes of cooking to thicken sauce. Serve over rice, noodle or potatoes. NOTE: Carrots and potatoes may be cooked along with chicken in sauce, if desired. Microwave directions: Use a 7"x9" or 9"x13" baking dish. Cover with waxed paper, cook at 80% power for 28-32 minutes, until meat near bone is no longer pink. Turn twice during cooking.
