Onion Soup
Quantity/Servings:    1cup
Ingredients:
2 Tablespoons acceptable margarine
3 cups thinly sliced onions
6 cups low sodium beef broth
1/2 teaspoon ground pepper
12 slices of French bread (baguette, approx. 1/3 oz each), toasted
4 Tablespoons grated Parmesan cheese
Preparation:
Preheat oven to 450 degrees.  Heat margarine in large saucepan over medium-high heat.  Add onions and saute 2 minutes.  Cover and cook until translucent.  Stir in broth and pepper, bring to a boil.  Ladle equal portions into 6 ovenproof bowls.  Place two bread slices into each bowl; top with 2 teaspoons cheese.  Place bowls in oven and bake 5 minutes.  Serve hot.
