Pan Roasted Corn with Green Onions
Quantity/Servings:

Ingredients:
2 tbsp unsalted butter
1 1/2 cups minced white onion
2 cloves garlic, minced
1/2 tsp ancho or regular chile powder
5 cups fresh or frozen corn kernels
1 bunch green onions, sliced (1 cup)
1/2 tsp salt
1/8 tsp black pepper
1/4 cup chopped fresh cilantro
Preparation:
In 12 inch skillet, melt butter. Add onion, garlic, chile powder; cook 7 minutes to lightly brown.  Add corn, green onion, salt, pepper; cook until corn is just tender, add cilantro.
