George Strait's Spanish Rice

1 cup raw rice
2 tbsp vegetable shortening
1 small onion, chopped
1/2 bell pepper, chopped
2 cups water
2 tsp chili powder
10 oz tomatoes, chopped
1 1/2 tsp salt
In a skillet, brown rice in shortening.
Add the onion and bell pepper; stir. Add water, tomatoes including juice, chili powder, and salt. Cover and simmer 30 minutes or until rice is tender and liquid is absorbed.

Butter
Seasoned salt
Lime juice
Pepper
"First, catch a big redfish, legal of course." Split down backbone, leaving the skin on. Season each side with butter, seasoned salt, lime juice and pepper. Lay each side skin-down on the grill. Grill the fish on medium to high heat until done, approximately 10-15 minutes. George says: "Sometimes, I put tin foil on the grill to make it cleaner."
