Zucchini Appetizers These are tasty, with a Parmesan and garlic flavor. | OVEN Preheat oven to 350° PAN 13x9x2 inch glass pan Ingredients:NOTE: Zucchini is sometimes called green squash3 cups very thinly sliced unprepared zucchini - 4 small or 2 large 1 Cup Bisquick baking mix 1/2 Cup finely chopped onion 1/3 Cup grated Parmesan cheese 1/2 Tspn. dried marjoram or oregano a dash of pepper 1/2 Cup vegetable oil 1 Tbspn dry parsely or 2 Tbspn. fresh snipped parsely 1/2 Tsp. seasoned salt 1/2 Tsp. of finely chopped garlic 4 eggs slightly beaten |
Recipe:Mix all ingredients. Spread in a pan and bake until golden brown, 25 minutes. Cut into 2 by 1 inch pieces.MY BIASED NOTE: I like this best prepared ahead of time, sliced into squares and toasted warm again when ready to serve. This way the toasted pieces benefit from browning on the edges of each piece, adding more flavor. |
