| Today's recipe: Brandy Bread Pudding |
| My mother used to love making this for my sister and I when we were growing up. Daddy was usually nowhere to be found whenever my sister and I would get good grades or do something to make her proud she'd come out of her room and make us this. It was always a favorite of ours, until i started making it, then Felicia would bang her head on the table for hours on end, but she'd always eat it and like it. I think. At any rate, my husband and friends like it and in continuation of the tradition started by my mother, whenever the girls, Kendall and Marina did well in school, I would always make this for them (well, for Marina anyway, but I could never leave poor kenny out). I hope you do the same. |
Ingredients: 10 slices day-old bread (Fresh is better though) 1/2 teaspoon Nutmeg 1 qt milk, heated 1 teaspoon cinnamon 1 cup light cream 1/4 cup of butter, melted (trust me, don't use margarine). 4 eggs 1/2 cup seedless raisins 1 cup sugar Brandy sauce (Below)* 1 teaspoon Vanilla extract 1. Preheat oven to 350F. 2. In a large bowl, combine bread, milk, and cream. 3. In a medium bowl, beat eggs slightly. Stir in sugar. Add to bread mixture. 4. Stir in vanilla, nutmeg, cinnamon, butter, and raisins. 5. Pour into buttered, shallow, 2-quart baking dish, set in larger shallow pan. Pour 1 inch of hot water into the larger pan. 6. Bake 1 hour, or until a knife inserted in the center comes out clean. 7. Serve warm, with Brandy sauce. Makes 8 servings. Brandy Sauce: 3 egg yolks 1 tablespoon of cornstarch. 1 cup sugar 1/4 cup water 1 teaspoon vanilla extract 3 tablespoons brandy* 1 1/2 cups milk 1. In a small saucepan, beat egg yolks slightly. Add sugar, vanilla, and milk; blend well. 2. Cook over low heat, stirring until mixture boils. 3. In a small bowl, blend cornstarch and water until smooth. Stir into hot mixture. Cook, stirring , until thickened. 4. Remove from heat, and stir in brandy*. 5. Serve slightly warmed or chilled. makes something like 2 cups. * Just a note, my mother would use more like 2 cups of brandy. I have adjusted the measurements. Please be careful with the amount of alcohol you use if this going to be an afternoon snack for the kids. My mother had a little problem so to speak. |
