MOM’S OMELET

When I was nine, I used to watch my mom make my favorite breakfast . She would make me mushroom, cheese, sausage omelets. I learned how to make them from watching mom.
3 eggs
1/2 tsp. Salt
dash pepper
dash garlic (not too much)
1/2 onion, chopped
1/2 can or 2 large mushrooms
4 slices American cheese
4 oz. Breakfast sausage
2 Tbsp. Butter
Brown sausage, drain.
Melt butter and saute cut vegetables together until just barely soft.
Mix vegetables with sausage and set aside
Mix eggs with seasonings, pour into pan.
When the edges start to get solid, lay cheese slices over the top, spread meat and vegetable mixture in the middle and GENTLY bring the edges of the omelet over the top.
Slide onto serving plate.
