Fudge
Ingredients
2 cups granulated white sugar
1 cup cream
2 to 2-1/2 oz. unsweetened chocolate, chopped
1 tablespoon butter
Preparation Steps
Combine
sugar and cream and cook over moderate heat.
Add
the chocolate peices when this mixture becomes very hot.
Stir
constantly.
Cook
until mixture reaches soft-ball stage (238 - 240 degrees Fahrenheit).
Remove
from heat and add butter.
Cool slightly
, then mix until fudge starts to thicken.
Transfer
the mixture to a buttered tin.
Cut
into diamond or square shaped pieces before fudge hardens completely.
Fluffy Cranberry Pie
Ingredients
32 large marshmallows or 3 cups miniature marshmallows
1 16-ounce can Whole Berry Cranberry Sauce (without berries if you prefer)
1 cup chilled whipping cream
1 teaspoon vanilla extract
1 (6-ounce) pre-made vanilla wafer or graham cracker crust
Preparation Steps
Combine
marshmallows and cranberry sauce in a medium sauce pan.
Cook
on medium-low heat, stirring constantly, just until the marshmallows are melted.
Remove
from heat and let cool 10 minutes.
Refrigerate
the mixture about 1 hour, stirring occasionally, until it is the right consistansy, and mounds slightly when dropped from a spoon.
Beat
the whipping cream and vanilla in a small mixing bowl until stiff peaks form.
Stir
cranberry mixture until blended and fold gently into whipped cream.
Pour
into crust and chill until set, at least 5 hours.
Serve
by garnishing slices with additional sweetened whipped cream and some cherries, if desired.
Fresh Apple Pie
Ingredients
1 (9 inch) pie shell
6 cups thinly sliced Granny Smith Apples
1 tablespoon lemon juice
3/4 cup white sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup all-purpose flour
1/2 cup packed brown sugar
3 tablespoons butter
Preparation Steps
Preheat oven
to 375 degrees Fahrenheit.
Place
sliced apples in a large bowl and sprinkle with lemon juice.
Mix together
the white sugar, 2 tablespoons flour, cinnamon, and nutmeg.
Sprinkle
the mixture over the apples and toss until the apples are evenly coated.
Spoon
the mixture into pastry shell.
Mix together
1/2 cup flour and brown sugar in a small bowl.
Cut in
the butter until mixture is crumbly.
Sprinkle
the mixture over the apple filling.
Cover
the top loosely with aluminum foil.
Bake
in the preheated oven for 25 minutes.
Remove
the foil and bake an additional 25 to 30 minutes, until top is golden brown.
Cool
the apple pie on a wire rack.
