chicken wings with blue cheese dip                serves 8            2 pts
Combine:
1/4 cup all-purpose flour
1/4 tsp salt & pepper
Add:
1 pound chicken breast or tenders (2 inch strips)
Combine in a separate bowl:
1/2 cup barbeque sauce
2 Tbs hot pepper sauce
Coat flour coated chicken in sauce. Transfer to sprayed cooking sheet.  Bake 400, 30 minutes or until done.
Serve with:
4 large celery, ribs cut into 2-inch sticks
Mix together:
1/2 fat-free sour cream
1/2 oz blue cheese, about 2 Tbsp, finely crumbled


"Lynne's Special" Zucchini Planks             3pts    serves 4
3/4 pound zucchini (4 medium) cut diagonally into a tad thicker than 1/4 inch planks
Combine  1/4 cup all-purpose flour  1/4 tsp garlic powder, dry mustard, & salt.  Toss in zucchini to coat  then dip into  1/2 cup buttermilk.  Dredge through  4 oz baked potato chops- crushed  Coat a large baking dish with cooking spray.  Bake 400 degrees for 20-30 minutes.  Serve hot.
Beef Nachos                         serves 6           5 points
Brown 1/2 pound lean ground beef until brown, 3-5 minutes.  Drain off any fat and return to pan.  Add 2tsp chili powder, 1 tsp ground cumin, 1/2 tsp table salt & pepper; stir to coat beef.  Stir in 1/3 cup salsa and heat through; remove from heat. 
Arrange 8 oz  tortilla chips, about 72 in a shallow ovenproof dish.  Spoon beef mixture over chips and sprinkle with 1/2 cup shredded reduced-fat  Mexican cheese and 2 Tbs jalapeno peppers, sliced.  Bake 400 degrees for about 5 minutes.  Yields about 12 topped chips per serving.
Rocky Road Brownies     24 servings             3 pts
1 package regular brownies, dry mix, anout 21 1/2 oz
1/4 cup water & unsweetened applesauce
4 large egg whites
1/4 cup walnut halves, coarsely chopped
2 oz mini choc chips, about 1/4 cup
8 medium marshmellows or 1 cup mini marshmellows
Instructions
1. Coat a 9x 13 pan with cooking spray; set aside.
2. Prepare brownie mixture according to package directions for lower fat  brownies using 1/4 cup water, applesauce and egg whites. Pour into prepared pan.
3. Sprinkle walnuts over top of brownies; bake according to package directions.  Remove from oven about 5 minutes before the end of the baking time, and toss chocolate chips and marshmellows over the; cook 5 minutes more.  Remove from oven and cool brownies on a wore rack. Cut into 24 pieces; serve.
