New Year's Appetizers & Recipes
Herb Oyster Crackers

Ingredients:
- 2 (12 oz.) package oyster crackers
- 1 (1 oz.) package ranch dressing mix
- 1/2 teaspoon dried dill weed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon pepper
- 1 cup vegetable oil

Directions:
1.) Place crackers in a large plastic bag. Season with dressing mix, dill weed, garlic powder, and lemon pepper. Pour in the oil, close bag and shake vigorously until the crackers are covered with seasoning.

Black-Eyed Pea Salsa
Makes 10 servings

Ingredients:
- 1 cup white rice
- 2 cups water
- 2 (15 oz.) cans blackeye peas, drained
- 1 (10 oz.) can diced tomatoes with green chile peppers

Directions:
1.) Bring a small pot of rice and water to a boil. Cover pot, reduce heat to simmer and lte cook 20 minutes or until rice is tender.
2.) In a large saucepan, combine rice, peas, tomatoes, and chile peppers. Stir the mixture over medium heat until it is heated through.

Pasta Salad
Makes 6 servings

Ingredients:
- 1 8 oz. package of tri-colored pasta, cooked
- 3 ears of cooked corn, with the kernels cut from the cob
- 1 bunch broccoli florets, cut small and steamed
- 15 large black olives, sliced
- 15 green olives with pimento, sliced
- 1 14 oz. can artichoke hearts, halved
- 1 red pepper, diced
- 1 8 oz. can water chestnuts
- 1 15 oz. can chickpeas, rinsed and drained
- 1/4 cup Italian dressing or more, to taste

Directions:
1.) Combine all the ingredients, mix well, and refrigerate. Serve cold.

Black Bean Chili
Makes 6 servings

Ingredients:
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 2-3 tablespoons olive oil
- 1 lb. mushrooms, sliced
- 1 green bell pepper, chopped
- 1 green chili pepper or jalapeno, chopped
- 1 16 oz. can black beans
- 1 16 oz. can crushed tomatoes
- 1/2 cup textured vegetable protein
- Chili powder and salt, to taste

Directions:
1.) In a large pot, saute the onion and garlic in the oil until the onions become soft. Add the mushrooms and saute for 5 minutes. Add the peppers and saute for a few more minutes. Add the black beans, tomatoes, textured vegetable protein, chili powder, and salt and simmer for 30 minutes.

New Year's Combo

Ingredients:
- spiced nuts
- raisins
- dried apricots
- pretzels
- sunflower seeds
- pumpkin seeds
- chex cereal

Directions:
1.) Combine all the ingredients in a bowl, and enjoy!

"Tofu" Pigs In A Blanket

Ingredients:
- puff pastry dough
- tofu hot dogs
- dijon mustard or catsup

Directions:
1.) Roll out a puff pastry dough to 1/4 inch thickness. Cut it into rectangles and spread each one with dijon mustard or catsup. Wrap the rectangles around tofu hot dogs and bake them in a 425 degrees oven for 10 minutes, then cut each into several pieces.

Festive Burritos

Ingredients:
- tortillas
- canned refried beans
- salsa
- guacamole
- corn

Directions:
Microwave the tortillas and fill them with all the ingredients for quick easy burritos for each guest at your New Year's Eve party.
