| Infusion - Bring water to a boil. Remove tea kettle from heat. Add herbs to strainer. Hold strainer over tea cup and pour hot water over herbs into tea cup. or Remove tea kettle from heat, add tea to hot water. Let tea steep for 10 minutes. Hold strainer over tea cup and pour hot water through strainer into cup. | ||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||
| Decoction - Bring water to a boil. Reduce tea kettle from heat. Add herbs to hot water and steep for 10-20 minutes on medium heat. Remove from heat. Hold strainer over tea cup and pour tea through strainer into tea cup. Allow tea to get warm enough to drink. Test temperature of tea by holding cup.
