Husband Waiting
(Espera Maridos )

Shoping list:

  • 1 kg of sugar
  • 14 eggs
  • vinegar
  • cinnamon

Place 1 kg of sugar in a pan slightly covered with water. Take to the stove until it turns caramel color.
Blend 14 whole eggs and pour the mixture into the caramel sugar, stirring well.
Add 2 table spoons of vinegar and take to the stove again until boiling and stirring it for 5 minutes.
Pour into a deep saucer and pour cinnamon on top.

Wine Pudding
(Pudim de vinho)

Shoping list:

  • 10 egg yolks
  • 500 grs. of sugar
  • 1 liqueur glass of O'Porto Wine
  • caramel

Mix all ingredients together and put into a caramelized bain- marie pan. Take to the oven or stove and let it cook for 1,30m without opening. This pudding is very good to cook along with the cozido or caldeirada of Furnas.

Nun's belly
(Barrigas de freira)

Shoping list:

  • 600 grs. of sugar
  • 6 eggs

Add water to the sugar until is covered, wait to start golden. Cut the egg yolks without stirring, put in the pan. Beat the white of the eggs until they become thick and stir strongly into this misture taking away from the stove. It's ready.

Sweet rice with cream
(Arroz doce)

Shoping list:

  • 1 liter of milk
  • 200 grs. of rice
  • 300 grs. of sugar
  • 8 egg yolks
  • 2,5 dl (1 cup) of wipping cream
  • lemon peal

Cook the rice with a lemon peal. Add the milk until it boils again. Add 250 grs. of sugar and let it boil for 5 more minutes. Beat the egg yolks with some of the liquid from the rice and mixture into the rice without litting it boil.
Beat the wipping cream with 50 grs. of sugar and mix everything.

Pineaple cake
(Bolo de ananaz)

Shoping list:

  • 4 cups of sugar
  • 4 cups of flour
  • 2 cups of milk
  • 250 grs of butter
  • 10 eggs
  • 2 spoons of baking powder
  • 1 can of pineaple

Mix everything except the pineaple. In a greased pan place a layer of dough and a layer of pineaple pieces alternating.
Take to the oven until is golden brown

Caramel cake
(Corvo Island)

(Bolo caramelo)

Shoping list:

  • 100 grs of sugar or 1/2 bottle of caramel
  • 1 cup of water
  • 2 dl. of milk
  • 100 grs. of butter
  • 3 eggs
  • 140 grs of flour
  • 2 tea spoons of baking powder

With the 100 grs of sugar a little bit of water make the caramel or you may use the bottled one. Add the milk stirring until is thick. Beat the butter with the 120 grs of sugar,add the egg yolks, the caramel and the flour.
At last the egg whites that should be beaten stiff. Take to the oven in a greased and floured pan.

Honey Delight
(Delícias de mel)

Shoping list:

  • 4 eggs
  • 2 cups of sugar
  • 4 soupspoons of honey
  • 2 soupspoons of melted butter
  • 2 cups of milk
  • 3 cups of flour
  • 2 teaspoons of baking powder
  • 2 coffee spoons of cinnammon

Beat the egg yolks with the sugar and the melted butter. Add the other ingredients and at the end the egg whites beaten thick.
Butter and flour a pan and take it to medium/low oven until is golden.

Angel cake
(Bolo de Anjo)

Shoping list:

  • 8 egg whites
  • 1 soup spoon of cremor tartar
  • 1 cup of sugar
  • 3/4 cup of flour

Beat the egg whites with the cremor tartar until is very fluffy, add slowly the sugar and the flour beating constantly. Take it to the oven for 45 minutes. Not necessary to grease the pan.
You may use diet sugar and integral flour, a very good cake for diets.

Dona Amélia Cakes (Terceira Isl.)
(Bolinhos da D. Amélia - Terceira)

Shoping list:

  • 250 grs of sugar
  • 100 grs of fine maize flour
  • 125 grs. of melted butter
  • cinnamon
  • ginger
  • dried raisins
  • 4 eggs
  • 2 egg whites
  • 2 spoons of syrup

Beat the eggs with the sugar, add the flour, all the spices and the heated butter. Grease some cup cakes and fill with the dough. Take to the oven briefly as they shouldn't dry.
After ready pour over some confectioned sugar.

Caiota (XUXU) dessert
(Doce de caiota)

Shoping list:

  • 500 grs of sugar
  • 500 grs. of caiota puré
  • 1/2 l. of water
  • 150 grs. of nuts or other similar ingridient

Take to the sugar with the water on the stove until melted and a little toasted. Add the caiota puré, let it dry a little, pour the nuts stirring constantly.
Place on the dish and decorate with raisins, cherries.

Caiota Pudding
(Pudim de caiota)

Shoping list:

  • 4 big caiotas
  • 4 eggs
  • 1/2 kg o sugar
  • 1 soup spoon of butter
  • 1 calix of O'Porto wine
  • cinnamon
  • lemon green peel

Cook the caiotas and blend. Place the sugar covered with water on the stove and let it turn gold, adding the caiota puré after squeezing it well. Add all the other ingridients and a spoon of corn tarch stirring well.
Place in an oven dish greased and foured. Stays in the oven until toasted.

Modern cream cheese cake
(Bolo de queijo)

Shoping list:

Filling:

  • 2 pounds of cream cheese
  • 2 eggs
  • 1 cup of sugar

Batter:

  • 3 cups of flour
  • 3/4 tsp. baking soda
  • 1 tsp baking powder
  • 1/2 cup of butter
  • 2 eggs
  • 1 cup of sugar
  • 1 cup of sour cream
  • 1/2 cup milk

Mix the sugar and butter, add the eggs and milk. Add 1/2 of sour cream mix well and add the rest. Place 1/2 in a greased and floured 13x9'' pan. Mix the filling and pour over, and spread the rest over the cheese filling.

Topping:

  • 1/4 cup of sugar
  • 1/4 cup flour
  • 3 tbsp butter

Mix together and crumble over the cake. Bake for about 45 minutes.

Coconut cake
(Bolo de côcô)

Shoping list:

  • 2 cups of sugar
  • 2 cups of flour
  • 1 jar or can of coconut milk
  • 4 eggs
  • 1/4 package of coconut - 50 grs.
  • 1 tea spoon of baking powder

Beat the sugar with the egg yolks, add the flour, the coconut milk. Beat the egg whites until very fluffy and add to the mixture, as well as the other ingredients.
Pour into a greased a pan and place in the oven (250º or minimum heat) until is golden

Golden Soup Dessert
(Sopa dourada)

Shoping list:

  • 500 grs. of sugar
  • 6 eggs yolks
  • 2 whole eggs
  • 1 soup dish full of little squares of stale bread (even 4 days or more)

Beat the eggs a few minutes until is a little bit foamy. Place the sugar in a pan just slightly covered with water and let it boit until it drops from a wooden spoon making a thin drop, like a thread. Place the bread inside and stir until is well mixtured stirring in the beaten eggs until is almost all the same color.
Take it from the stove, place in a dish and spread a little bit of cinnamon to taste

Custard pudding
(Pudim flam)

Shoping list:

  • 3 whole eggs
  • 6 spoon fulls of sugar
  • 1 liter of milk

Blend all ingredients and pour into a caramelized pyrex. Put in a medium-low oven for around half hour.

Passion fruit ice cream
(Gelado de maracujá)

Shoping list:

  • 1 can of condensed milk
  • 1/2 liter of whipping cream
  • 12 passion fruits
  • 1 package of gelatine dissolve with water

Beat everything very well, until fluffy and take to the freezer.

Icing
(Coberta para bolos)

It is excellent to cover birthday cakes or cup cakes

White beaten 2 eggs until is very fluffy. In a pan pour 2 cups of sugar slightly covered with water. Let it boil until makes a pearl shape with the wooden spoon.
Take it away from the stove and pour over the egg whites stirring strongly until is thick enough to cover your cake.
Boil 1 cup of sugar with 1/2 cup of milk until it makes a thread like with the wooden spoon. Pour this misture into a bowl and add 1 tea spoon of flour beating it strongly until well mixtured. Let it cool until you use it to cover your cake.

Country cookies
(Bolachas campestres)

Shoping list:

  • 1/2 cup melted butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg beaten
  • 1 cup flour
  • 1 cup rice crispies
  • 1 cup quaker oats
  • 1/2 teaspoon of baking soda
  • 1 cup dates cut fine or any other dried fruit (optional)

Make balls a little smaller than a walnu and press two ways with a fork You may mix the day before and keep in the refrigerator.

Fruit cream with cake
(Bolo de frutas)

Shoping list:

  • 1 package of vanilla pudding
  • 6 lady fingers, or left over cookies or cake
  • 2 cups of milk
  • 1/2 cup whipping cream
  • 1/2 cup of a fruit preserve

Prepare pudding as directed on the box. Cool. Stir in the whipping cream, reserving spoonful for garnish. Turn pudding into serving dish,place cake or cookies around, add the preserves.
With cupcakes you may take the top and fill with the crean and preserves, putting back the top.

Chocolate Geingerbread cookies
(Bolinhos de chocolate Geingerbread)

Shoping list:

  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup molasses or honey
  • 3 cups flour
  • 2 tbs cocoa
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Cream butter, add the sugar beating until fluffy, add the egg and syrup. Sift together remainin ingredients and stir in until well blended. Let it stand for one hour. On a floured surface roll out dough 3/16 inch thick.
Cut with cookie cutters (2 inch)and place on a greased baking sheet. Bake 7 minutes removing from rack immediately.

Christmas sugar cookies
(Bolinhos de açucar do Natal)

Shoping list:

  • 3/4 butter softened
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 tsp baking powder
  • 1/8 tsp nutmeg
  • 2 tbsp milk
  • 1 tsp vanilla (optional)

Cream butter add gradually the sugar, beat in the egg, stir in the rest of the ingredients. It makes a stiff dough. Wrap in waxed paper and let it stay in the refrigerator for 1 hour. On a floured surface roll as the gingerbread cookies, place on a ungreased baking sheet, 6 minutes until golden.
Cool on a wire rack.

Decorating Icing
(Cobertura de bolos)

Shoping list:

  • 2 cups confectioners' sugar
  • 1 egg white light beaten
  • food coloring

Mix sugar and a spoonful of egg white beating until smooth and adding gradually the egg white until the desired consistency. Add the colours as desired. Keep the bowl covered with a damp cloth as it dries very fast.
If tou want to make Christmas cookie decoration add the flour 1/2 cup so that the dough is firme to handle and make the shapes you want.

Golden Bread Slices
(Fatias douradas)

Shoping list:

  • 12 slices of yesterday's bread
  • 1L of milk
  • 3 eggs
  • 150 grs. of sugar
  • 250 grs. flour
  • oil
  • cinnamon

Beat the eggs with the flour and add slowly 1/2 of the milk. In a separate bowl deep the slices of bread and after deep into the egg mixture. Fry in hot oil covering it afterwards with a misture of sugar and cinnamon.

Angel craw
(Papos de Anjo)

Shoping list:

  • 9 egg yolks
  • 2 egg whites
  • Syrup
  • 750 grs. sugar
  • 3,5 dl water
  • 1/2 cup triplice

Beat the egg yolks until very fluffy. Beat the egg whites and mix carefully. Grease cup cakes forms, filling half of it. Take into the oven until they are cooked. Unmold and let them cool.
Prepare the sugar syrup with the water and the orange skin. Let it boil. Add the triplice. Deap each one in the syrup and pour the rest over them. You may take them into the refrigerator for a while.
Save the egg whites for other uses.

Meringue Sighs
(Suspiros)

Shoping list:

  • 7 egg whites
  • 200 grs of sugar

Beat the whites very firm add the sugar beating again until very fluffy. Make little cake like and take to low oven on a paper covered oven dish.

German cake
(Bolo Alemão)

Shoping list:

  • 2 cups sugar
  • 1 cup margerine or butter
  • 2 tbsp orange rind
  • 4 egges separated
  • 3 cups flour
  • 21/2 tsp baking powder
  • 1/2 cup orange juice
  • 1/2 cup milk

Cream sugar and butter, add egg yolks, orange rind, mixing very well. Add alternately flour, juice and milk beating constantly. Fold in stiffed egg whites. Pour into grease pan, cook until toothpick comes clean.

Orange Glaze:

  • 2 cups confectioner's sugar
  • 2 tbsp orange juice

Stiff the sugar and combine with the orange juice, mixing until well blended. Pour over the cake.

Chila pie
(Tarte de chila)

Shoping list:

  • 200 grs. flour
  • 150 grs. margerine or butter
  • 50 grs sugar
  • 250 grs. almond skinless and cut into small slices
  • 200 grs sugar
  • 3 eggs
  • 3 egg yolks
  • 150 grs. chila preserve
  • 1 dl water

Mix the flour, 50 grs. sugar and butter. Let it stand for a while. Bring to boil the water and the sugar, add the almonds, and the preserve. Let it cool. Roll the dough and place into a pie pan. Pour the creamy filling inside and take into the oven until the crust is cooked.

Russian pudding
(Pudim russo)

Shoping list:

  • 3 tbsp strong coffee
  • 14 grs powdered gelatine
  • 260 grs sugar
  • 3,5 dl milk
  • 75 grs. cooking chocolate
  • 3 eggs
  • 0,5 l. whipping cream
  • 1/2 tsp cremor tartar

Soak the gelatine and add 200 grs sugar and the chocolate taking in bain-marie, stirring until dissolves all. Beat the egge yolks and add to this mixture stirring constantly. Let it cool and put in the refrigerator until it becomes a little bit solid. Beat the egg whites stiff, add the cremor tartar, the 60 grs of sugar until seems merengue. Take the chocolate cream out of the refreigerator as soon as it becomes a little solid and add the coffe. Add this mixture to the other one and at last the cream slightly beaten. Pour into a form and let in the refrigerator overnight.
The following day carefully unmold the puding to a dish and decorate.

Island cake
(Bolo da ilha)

Shoping list:

  • 5 eggs
  • 125 grs sugar
  • 150 grs flour
  • 15 grs pouwdered chocolate
  • 2 tbsp honey
  • 1 tsp cinnamon

Beat the eggs with the sugar, add the other ingredients mixing well. Pour into a greased and floured pan, cook aroud 35 minutes.

Fiiling and cover:

  • 250 grs butter or margerine
  • 100 grs sugar
  • 2 eggs
  • 2 tbsp honey
  • 60 grs chocolate

Melt the chocolate. Mix all the ingredients, add the chocolate until creamy.

Aguardente biscuit
(Biscoitos de aguardente)

Shoping list:

  • 6 whole eggs
  • 6 egg yolks
  • 1 pound of flour
  • 1 chalice moonshine
  • 1 sugar spoon of sugar

Mix everything very well and knead the dough on top of the counter. Wrap in a cloth and cover with a blanket. Let it stay for 2 hours. After shape little biscuits and cut on the sides with a scissors.
The oven must be very hot.

Currant cake
(Bolo de passas)

Shoping list:

  • ½ c. butter
  • 1 c. sugar
  • ½ c. flour
  • ½ c. milk
  • 1 c. raisins
  • 6 egg whites
  • ½ tsps cremor tartar
  • ½ tsp baking powder

Mix everything well add the fluffy egg whites and the cremor tartar and baking powder.
Goes into the oven in a greased pan.

Cornmeal cookies
(Bolachas de milho)

Shoping list:

  • 250 grs flour
  • 250 grs corn flour
  • 250 grs sugar
  • 250 grs butter
  • 1 c. milk

Knead everything well and roll the dough more or less 1 inch thick.
Cut the cookies with a glass or appropriate form. Goes into the oven in a greased pan.

American cake
(Bolo Americano)

Shoping list:

  • 250 grs flour
  • 250 grs corn flour
  • 2 eggs
  • 2 tbsp butter
  • 1 ½ c. milk
  • 2 tsp baking powder

Mix everything well and take into the oven in a greased pan.
