Linda's Healthy Recipes
Welcome to my healthy recipes.  This is kind of an offshoot from my other website Linda's Herbal Remedies. Many of us don't eat healthful foods for a number of reasons.  One  problem that I have found is that many of the " health" recipes are too complicated, use weird ingredients & just don't taste good. I plan on using simple recipes with easily available foods. These will NOT take you all day to prepare. As with my herbal remedies, I will add as I have time so check back.
                  Stir Fry
3 cups water
11/2 cups either barley or brown rice
     (I prefer the rice)
1/2 cup diced green pepper
1 large onion, diced
1/4 cup butter
1 cup diced mushrooms or 1 small can
seasoning ( see note *)
Boil water in kettle & add barley or rice. Turn on low heat & cover & cook slowly for 30 to 40 minutes until rice/barley is tender & water is absorbed. Place in  a large skillet or a stir fry pan . Add  all other ingredients . Stir fry until veggies are tender crisp.( just a couple of minutes)
* for seasoning you can use chicken or beef bouillon cubes, add 2  in the water you are cooking the barley or rice in.
Another suggestion for seasoning is called Braggs Aminos. This has a very good taste, is made from soybeans so it is also good for you. You can find this in health food stores . A little goes a LONG way.
      Apple Crisp
6 to 8 apples or 2 cans
1/2 cup raisins
1/3 cup water
1 cup oats (not instant)
1/2 cup whole wheat flour
1/2 cup butter
1/2 cup packed brown sugar
2 teaspoons cinnamon
Peel & slice apples in a greased 9x13 inch baking pan. Sprinkle with raisins & water. Combine remaining ingredients in a bowl, mix well. Sprinkle over apples. Bake at 350 for 30 minutes. This is delicious!!
You can pour milk over it if you like. It is good warm or cold
          Lentils & Rice
This is a super easy recipe.
1/2 cup brown rice
1/2 cup lentils
3 cups water
1 chopped onion.
seasoning ( Boullioncubes or Braggs Aminos)
Bring the water to a boil & add the bouillon cubes if using them, rice, lentils & onion.
Cover & cook on low heat for about 1/2 hour until water is absorbed. If using Braggs Aminos, season after cooking to taste.
I hope you try the Braggs Aminos as it is an excellent tasting product. You will also notice in my recipes that I use butter instead of substitutes. Also real eggs, etc.
I believe that the natural is always better than a man made imitation.
Tip: Cook brown rice in bulk as it will keep for several days in the fridge. This will cut down your preparation time. The ratio is 3 parts water to 1 part rice.
Crock Pot Soup
