I. Where to find different types of chocobos:

Wonderful: Can be found in the arctic plains, along the western coast of the continent
Great: Can be found on the same continent as the town of Mideel, to the west of the forest
Good: Can be found in Golden Saucer area
Above-Average: Can be found in same area as Great Chocobos
Average:
Same area as Good Chocobos
Poor:
 Can be found in area of the Chocobo Ranch
Weak: Can be found in arctic, same area as Wonderful Chocobos

Choco Billy's ratings go as follows, from best to worst:

II. How to get different races of chocobos:

River and Mountain: I'm putting these two together because you can get both at the same time. First off, you had better buy out 6 stables at the Chocobo ranch. Next, catch (Using the chocobo lure materia) 2 Great chocobos, male and female, and 2 good chocobos, male and female. Second, get 2 carob nuts. These can be found near bone village, you steal them from the red dragons with lots of hit points. Now, the next part is important, you can race them now, or just breed them now. I suggest racing them because that increases your chances of getting a river or mountain chocobo, plus in the long run, the characteristics of the chocobo's parents are passed down to the next generation, which makes it easier to get to the S class. You need to get to the S class in order to breed a gold chocobo. However, if you are impatient, you can try breeding them now and worry about racing later. Anyways, breed one male great chocobo with one female good chocobo and give them a carob nut. Next, breed the male good chocobo with the female great. After this, you should have 2 new chocobos, a River (Blue), and a Mountain (Green) chocobo. If you were lucky, you may have gotten a male river and a female mountain, or vice versa. If you didn't, you could release one of the new chocobo's and breed a new one after a few minutes, but this also means you need another carob nut. Keep trying and eventually you should end up with opposite sexes of the two chocobos.

Black: Now that you have both chocobos, you have the option of racing them, or trying to breed them now, the choice is yours, but read the above if you want my opinion. After several minutes (10-15) Your chocobos should be fully matured. Release the 4 yellow chocobos if you haven't already, (We're done with them now) and breed the mountain and river chocobo using a carob nut. You should end up with a Black chocobo that can cross rivers and mountains

Gold: You must go to the arctic and catch a wonderful chocobo, opposite of the sex of your black chocobo of course. Here is where if you raced your previous chocobos, it will come in handy. Feed the newly caught chocobo until it says "no improvement" for the greens such as the Tantan Greens. Race the 2 chocobos until they are both in S class. Now, you must go out and get a "Zeio" nut. These can be found on the far North-Eastern Island where there is a forest on one of them. Land your airship and fight the goblins that reside in the forest. After you get a zeio nut and your two chocobos have been upgraded to S class, breed the two and you should get the infamous GOLD chocobo. With this new chocobo, you can collect the Knights Of the Round Materia, on the uncharted island in the North-East corner.

Carob Nut- Get from gold saucer. (Trade in for 500 gp at wonder square), steal from red dragons around bone village
Zeio Nut- Steal from goblins in north-eastern island with forest, kill the goblins as well

Nuts determine the outcome of a chocobo when you are breeding. The higher quality (more expensive) the nut is, the more likely the chance that the chocobo will be stronger than its parents. The two special nuts at the bottom of the list will cause the outcome of the breeding to be somewhat different. Refer to the above section on breeding for more info.
