RULES TO FOLLOW:
1. Always hold down R1+R2 to recharge your chocobo's stamina. This way, you can put your speed to the max without any drain, and your boosts won't decrease your stamina as much.
2. Try to get in front of the other chocobos early in the race. Nothing's worse than using your stamina trying to boost when a chocobo is right in front of you. Also, when you are in front, you can block the progress of the chocobo behind you by placing yourself in front of him.
3. If you don't have the best chocobo in the world, follow these tips:
Pick the short race instead of the long one. I will expain
why later.
Use only about 1/4 to 1/2 of an inch of your stamina in the beginning and only to get in front of the other chocobos.
If you follow the above tip, then you should have EXACTLY enough stamina to go full boost for the entire race once you reach a certain point. That point being after the left turn at the pirate ship, starting right when the course begins to go downhill and the transition between scenes if made. This only works for the short races, since I didn't test on the long course.
During the space scene, (Unless you have a mountain/black/gold chocobo) your chocobo will slow down greatly, if you are in S class, the others should be right behind you, try to get in front of them and prevent them from getting in front of you.
4. The advantages of the chocobos are as follows: (After
you breed them)

[Of course, your chocobos will differ, these stats I got from breeding that kind of chocobos several times and coming up with an average]
Yellow: No advantages, the average chocobo. You
can get to S class with one, but don't expect to win any races unless it
is a very fast chocobo.

Blue (River): The river chocobo usually has an average normal speed, but when you use it's boost, it really flies. I won my very first S race with this one, but it was a squeaker. (136kmH)(999 stamina)
Green (Mountain): The mountain chocobo has average speed and boost, but the best part about him/her is that when you get to a space/water scene when a normal chocobo would slow down, the green doesn't lose any speed as if it were a normal piece of track. Winning the S races are not an uncommon thing with this one, but it's lack of a high speed boost could damper your performance. (130kmH)(999 stamina)
Black (Mountain/River): This one combines the two
elements of the Blue and Green chocobo. It has an extremely fast boost,
yet it doesn't slow down in space/water environments. Expect to win alot
with this one, since it usually can fly ahead of all the others. (Especially
in the space scene)

Gold (All): What can I say about this one, it has
an extremely high top speed, it's boost is also extremely fast, and it
doesn't slow down during any scene. Almost a sure win with every S race
if you follow the tips above. (149kmH)(999 stamina)
5. Try to feed your chocobo enough greens to get it to at least 110 kmH and 600-800 stamina
6. Don't worry about the chocobos that go careening ahead of you at the beginning, this just means that they are boosting and will soon run out of stamina. You can pass them easily afterwards.
7. Always put the controls on manual if you haven't figured this out yet
8. Every once in a while, a chocobo named Teioh will race. (I think the rider's name is John, not sure though) This chocobo will always be faster and have more stamina than you, even when you have 999, it will have about 1237. When you first start to breed/race chocobos, he may beat you badly, but once you get the river/mountain/black/gold chocobos, you should be able to win the race by putting yourself in front of him in the beginning and using the full boosting technique above.
