Original: This is the sauce that got it all started.  My inspiration.  Out of all the sauces that I have looked at and tried.  None ever started with tomates.  It was either paste, puree, sauce or ketchup.  I chose tomatoes, and made my own basic sauce with it.  This is a nice starter product, with a perfect blend of vinegar, sugar, molasses and other seasonings and spices.  This one has a hint of heat right at the end, just the way I like it.  This is my family's favorite.

Pretty Piquin HotAs I was letting people sample the original, and a lot of people did like it.  There were one or two out there, namely my boss at Cafe di Coppia, Chef John Halligan, who said it could stand to be a little hotter.  Not a problem.  I did some research on hot chiles and came upon a little fellow called the Piquin.  It is dark red, and about the size of a cranberry, some even smaller.  On the Scoville Heat Scale, it is said that this rates at 140,000 heat units.  So, this one on a scale of 1-10 is right around a 6 or 7.  I didn't want it to be intolerable, but I still wanted it to make a statement.  This one is made in honor of my boss, John Halligan.

Roasted Garlic:  Man!  I love garlic!  I want it on, in and around everything I cook and eat.  Farmers cannot grow it fast enough for me.  I wanted a garlic sauce that didn't taste like spaghetti sauce.  I totally      hit the mark.  This has a whole lot of garlic, heck, it even has garlic floating in it.  Did I mention this has a lot of garlic in it?  In addition, it also has a hint of cayenne at the finish. You will definately taste the garlic though.

Mango-Chipotle: I have always liked mangos, and the smokey heat of chipotle peppers, I thought the combination would be interesting.  My sister-in-law, Amber, she tried it and it became one of her favorites.  I took out most of the hickory liquid smoke, because of the smokiness of the chipotle, for the same reason I removed some of the heat from Original flavor.  Rather than use molasses, I substituted fresh mangos.  Amber says she puts it on everything, but I think it goes well with chicken, pork or grilled fish.

All of my sauces are made from the basic tomato sauce I make, I do not add any extra salt to the sauce.. When they are finished, I label each bottle, and hand pour 12 fluid ounces into each jar.  This is my labor of love, you will get my best effort.  I figure, if you are going to spend your hard earned money on this product, you better get something very good.  Grab a spoon, a brush or a knife and start enjoying Tom A.
