SHANIA'S POTATO ROAST RECIPE

4 potatoes (peeled or unpeeled)
3-4 garlic cloves, sliced into slivers
1 tablespoon dry parsley flakes
1 bay leaf
1/2 teaspoon salt
sprinkle of pepper
4 tablespoon olive oil

optional (for variety)
4 tablespoon white cooking wine
1 teaspoon rosemary

Chop potatoes in quarters. Combine all ingredients in a roasting pot. Toss until potatoes are covered evenly. Place lid on pot and roast at 200-250 degrees for 4-5 hours for a slow roast or at 450 degrees for 45 minutes for a quick roast. Keep an eye on it in case your oven is really hot; it may cook even faster. Stir 15-20 minutes into baking. Makes 4-6 servings.
