CILANTRO CHICKEN
Recipe for 4 servings.
The aroma of this meal is incredible! This chicken is great served over rice.
Cilantro Chicken
  • 1 1/2 tsp vegetable oil
  • 4 boneless, skinless chicken breasts
  • 1/4 onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup wine
  • 1/4 cup fresh cilantro, chopped (stems and leaves)
  • salt & pepper to taste

Heat the oil in a large skillet over medium heat. When the oil is hot, add the chicken. Cook chicken approx. 4 mins per side or until nicely browned.

Remove chicken to a platter.

Add onions to the drippings in the skillet. Saute for 1 minute.

Stir in garlic, wine, and cilantro. Saute for 10 seconds longer.

Return the chicken to the skillet, sprinkle with salt & pepper to taste. Cover the skillet, reduce the heat, and simmer for 15 minutes. Check a few times during cooking to make sure the wine hasn't evaporated (if it has, pour a little more into the skillet).

Serve the chicken with a drizzle of liquid and plenty of the onion, garlic and cilantro from the skillet.
